Homemade sweet potato-potato fish cakes
I am not the healthiest eater (understatement). I do however notice that my nephew (under two-years) sees and copies some of my actions. I have therefore also taken creative tips from my sister on how to “hide veggies in food”. She is an absolute chef in the kitchen!
Sometime in Spring 2018, I decided to try out a fishcake dish. I made the recipe as I went along (apologies for therefore not adding the exact quantities). I had recently noticed a fishcake recipe from a dietician. What made it somewhat unique was that it contained oats.
I figured I might as well make my own fish cake recipe which included a diced onion that was fried in my Hotel Collection anodised pots (similar available from Amazon). I also added sweet corn, boiled and mashed sweet potato and a potato. You can add peas, diced carrots, celery and so forth. I really hope my nephew likes it.
Ingredients:
Canned fish in tomato sauce
Onion (diced and fired)
Potato (boiled)
Sweet potato (boiled)
Sweet corn (frozen)
Handful of oats
Crushed chillies
Lemon juice
Sweet chilli sauce
Pink salt
Black pepper
Origanum
Spices
Olive oil (to fry)
It may not be the “greenest” or healthiest meal, but it is one dish that makes it easy to eat starch, protein and veggies in one tasty sitting. It incorporates different textures, colours and flavours that sync well together. You also have control over how much salt and oil to incorporate. If you're you're not up for frying, you could bake it and serve this meal in a special stoneware plate (available on Amazon).
From one recipe, I managed to make three “different” cooking and/or serving variations. One as fried fishcakes, another that resembled an elevated mash potato and finally one that was moulded into the dish. There are many ways to serve this dish. In future, perhaps a digital food scale (available from Amazon) can help to replicate the recipe.
